Crazy oil pressure??

I have a piper pacer with an 0320 b2, 160hp. I just completed a major overhaul. All steel parts sent to aircraft specialist, cylinders by Harrison. Engine runs great, very strong but when it's cold the oil pressure will come up to about 40-45psi at 700-800rpms and drop about 5-10lbs when you speed the engine up.

It will eventually come on up but takes forever. Or if you just let it idle at 700rpms(40-45psi) for about 3-5 minutes then shut it down and let it set for 5 minutes or so then restart, the oil pressure will come right up to 80psi at 700-1000rpms and continue to raise as the rpms come up.

At cruise she will set right at the bottom of the top red line (98-100psi) and stay there until ya reduce the rpms down for landing. After all warmed up it will hold about 60psi at 1000rpms, 40-45psi at 700rpms, and 25psi at a dead idle(400rpms). As soon as ya pick the rpms up the pressure comes back up with it. Any advice would be great because it baffles the hell outta me.
